15 oz of ricotta cheese
2 eggs beaten
1/4 cup grated parmesan cheese
1/4 teaspoon of black pepper (or more-season to taste)
16 oz of ziti pasta, cooked and drained
30 oz of tomato sauce-now, I use a jar or two of marinara. It's your choice, and I spice it up.
1 red bell pepper
1 yellow bell pepper
1 16 oz. package of mushrooms
1 cup (or more-we know I use WAY more) of mozarella cheese
1 pound of ground meat-I use turkey, but hey, it's your preference.
1 large package of hot turkey italian sausage
Saute the onions, mushrooms and bell peppers till onions are transparent. Add the marinara, some fresh garlic (whatever amount you like) and set aside.
Boil and drain pasta, and add to the marinara. Keep aside.
Mix ricotta, pepper (and salt), parmesan and the eggs in a large bowl till blended. Add the ground meat and mix thoroughly.
Preheat oven to 350.
Slice and cook italian sausage and add to marinara mixture.
Spread pasta mixture in the bottom of a pan, and then spread some of the ricotta mixture on top. Top again with more pasta and cheese.
This makes two large casserole dishes of my famous yummy Six Feet Under Ziti.
It freezes beautifully.
